A red cabbage and vegetable broth soup from France good for indigestion problems or hangovers. I think this came from a message
board about 2001. I am not sure where it came from before that.
Ingredients:
8 cups good quality vegetable broth
1/2 medium red cabbage, finely shredded and minced
8 tablespoons lemon juice
salt and pepper
Procedure:
1. Prepare a good vegetable broth.
2. Place the finely chopped cabbage, lemon juice, salt, and pepper in a deep bowl.
3. Let the mixture sit for an hour, stirring from time to time.
4. Bring the broth to a boil, add the cabbage and all contents of the bowl, and cook for about 5 minutes. Serve immediately
after.
