1 pork sausage patty or 2 links of pork sausage
1 green or red bell pepper, seeded and sliced lengthwise, 1/4 inch thick
1 medium size Spanish onion, sliced lengthwise, 1/4 inch thick
1-2 clove(s) of garlic, peeled and smashed
1 Portuguese roll or hard roll of choice, sliced horizontally
1-2 slice(s) provolone cheese or mozzarella

Add the sausage to a heavy hot cast iron skillet. Cook allowing fat to render, about 3-4 minutes then flip and cook 3-4
more. Remove and set aside.
If you don't have enough sausage fat, add some virgin olive oil. Then add the peppers, onion, and garlic and turn down
heat to low, allowing the vegetables to soften and brown.
Stir once, just enough to scrape the bits of pork and fat from bottom of pan and turn the vegetables over. Cook until
the onions are translucent and the peppers are soft and browned and the garlic is slightly golden.
Add the sausage back to pan and layer the cheese on top of it allowing the cheese to melt and the sausage to heat.
Assemble the sandwich by placing the sausage on the bottom of the roll and topping it with the hot vegetables from the
pan. Add salt and pepper to taste.
