It's too hot to cook. So here is a wrap you make and throw in the cooler until you are ready to eat. Original was from an
old cooking for two and posted to De Gustibus July 18th
SERVES 2
1/4 cup chive & onion cream cheese
2 (8 inch) flour tortillas
1/4 teaspoon garlic powder
2 cups loosely packed fresh baby spinach
5 ounces thin sliced deli turkey
1/2-1 cup shredded monterey jack cheese
3/4 cup julienned sweet red peppers
1/4 cup chopped green onions
2 tablespoons ranch dressing
1. Spread 2 tbsp cream cheese over each tortilla. Sprinkle on the garlic powder.
2. Layer each with 3/4 cup spinach, turkey, cheese, red pepper and onions.
3. Top with remaining spinach. Drizzle on dressing.
4. Roll tightly jelly roll style. Wrap in plastic wrap. Refrigerate until serving.
