Jessie's Key Lime Pie

From Louise Haglers Tofu Cookery. The original recipe called for 1/2 cup honey. Use liquid sub in place if you do not consume honey.

SERVES 6 -8

1 (9 inch) pie crusts, baked
1 lb silken tofu
3/4 cup peanut butter
1/2 cup agave nectar or honey
1/4 cup oil
1 teaspoon vanilla
1/8 teaspoon salt

1. Blend the ingredients in a blender until smooth.
2. Pour into pie shell.
3. Freeze.
4. When ready to eat? Thaw for 10 minutes and serve.
