Japanese Tofu Recipes

This is the base for deep fried tofu which can be used in other recipes or as a snack. You can buy it but if you can't find it, it isn't that hard to make.

regular firm tofu [One waterpack package do NOT try this with silken such as mori nu. Well you can but it's your own fault ok?]
20 ounces vegetable oil
boiling hot water

Tools: colander and wok or deep pan for frying

Press well and cut into triangles about 2 inches long.

Heat oil in pot. You want it hot but not smoking. Smok is way too hot. Trust me you should see what it does to fry bread. Not to speak of irritating your smoke alarm. Black Moon suggests: dip a chopstick into the heated oil and bubbles rise from it the oil is ready for use.

Using a spatula, slide the tofu triangles one at a time into the hot oil and fry until Golden brown on both sides.

Use a large slotted spatula or spoon to remove.
Now remove and drain in draining grill or on paper towels.

You can refry a second time to make them darker and to give a crispness to them. Again drain if you fry a second time.

Rinse in Colander with boiling hot water. Cont under sink with hot water if you feel it is needed. Pat dry.
