Jessie's Key Lime Pie

From Vegetarian Times for their Chocolate Layer Cake

SERVES 12 , 1 layer cake frosting

10 1/2 ounces extra-firm silken tofu
2 teaspoons vanilla extract
6 ounces semisweet vegan chocolate, melted

1. Place tofu, chocolate and vanilla in a blender
2. blend until smooth.
3. Yes it must be silken. No it cannot be waterpacked or cotton. Yes it must be EXTRA FIRM no it cannot be firm or soft or any other.
4. Use the tofu specified only.

Note: This is my five cents but you might really want to add some sweetener to that. A Vegan Sugar is best. Avoid liquid unless you find the mix too thick. Sweeten to taste.
