Vegetarian Times May 97. I like it with homemade bread.
SERVES 4
1 lb chicken seitan strips, See light meat seitan recipe
1/3 cup grated carrots
1 stalk celery, minced
1/3 cup minced red onions or green onions
1/3 cup pecans (optional)
1/3 cup mayonnaise or vegan mayonnaise
salt and pepper
8 slices bread
lettuce leaves, to garnish
tomatoes, slices to garnish
1. Cut seitan into bite-sized pieces.
2. In large bowl, mix seitan and remaining ingredients.
3. Serve on bread with lettuce and tomatoes.
4. Note for Vegan use the Vegan Mayo. Why? Regular mayo contains eggs.
