3 tbs oil
2 cloves garlic, peeled and minced
1 small onion peeled and minced
2 medium tomatoes, finely chopped
1/2 tsp oregano
1/2 tsp thyme
1/8 tsp cayenne
8 oz seitan, drained cut into 1/4 inch peices
1 cup vegetable stock
salt to taste
Heat oil in pan over med high heat. When hot add garlic and onion saute until turning brown. Add tomatoes and stir until
the are soft [1 to 2 minutes]. Add remaining ingredients.
Bring to boil. Lower heat and cover and simmer gently for 15 minutes.
