Jessie's Key Lime Pie

This bread rises nicely, has a crunchy crust, is tender and soft with a good crumb. I have made it will all High Gluten and also with 2 cups High Gluten and 1 cup Seal [Seal of Minn] is a baker's flour if you are wondering what it is.

Now that I said that, watch my next loaves turn into Mud Bricks.

1 1/8 cups warm water [110 to 115 F]
2 teaspoons Butter Buds
2 cups High Gluten Flour
1 cup Seal of Minnesota Flour
2 tablespoons dried buttermilk
2 tablespoons sugar
pinch of salt
2 1/2 teaspoons instant yeast
1/4 tsp ground cardamon [if grinding own use less]

Place ingredients except cardamon in pan according to pan's requirements and use White setting. Adjust water and flour a TBSP at a time if needed until tacky. Add Cardamon at the beep.

NOTE: I always Proof the full amount of yeast in the full amount of water with the full amount of sugar and use immedately [that means start your bread machine as soon as you dump it in. Only way I can trust my yeast]

This makes 2 one pound loaves.

Seal of Minnesota [I usually get at our bulk store along with the High Gluten]
