1 1/2 tb olive oil
8 ounces chopped andouille sausage (omit this for Vegetarian option)
1 cup fresh fava beans
1/3 cup chopped onions
1/2 cup peeled, chopped plum (roma) tomatoes
1 clove garlic minced
1-2 tb chopped cilantro
salt & pepper to taste
Heat the oil in a large skillet if using the sausage meat option, add and saute for at least 2 minutes. Keep stirring
while cooking this. IF you are not and want that smokey taste add a drop or two of liqid smoke later in recipe. It has no
animal byproducts.
Next if not using meat or if using simply add the beans, onions, tomatoes, garlic and cilantro [and a drop of liquid smoke
and I ain't a jokin' I mean a DROP] and saute for 2 minutes, stirring occasionally.
Remove from heat and season to taste with salt and pepper. This is good with cheese dishes as well as fish and chicken
if you eat meat and cheese. I think it holds its own with some really good smoked tofu personally
NOTE: One pound of fava beans in the pod yields about one cup of shelled and peeled beans.
