Gluten using Vital Wheat Gluten [like in the box in the bakery section or from Bob's Red Mill or even bulk. Yes the stuff
you add to bread to make it rise. It makes Gluten also in a no sweat method[
1/2 cup instant vital wheat gluten flour
1/2 cup water
Stir together [add flavorings if you are adding to the gluten at this stage no I do NOT mean the broth.]and then knead
for about 5 minutes.
Makes 2 large or 4 small servings.
The broth that drove the whole house crazy:
2 cups no chicken vegetable broth [see note]
1/4 cup nutritional yeast
3 tbsp Braggs
1 tsp garlic powder
1 tsp onion powder
1 tsp dried rubbed sage
1/2 tsp dried thyme
1/2 tsp dried rosemary
1 tsp celery seed [you may want to use less the recipe I modified this from called for 1/4 tsp]
Put in pan. Cut seitan as desired and place carefully in broth. Bring to boil. Reduce heat and simmer. Let simmer for
50-60 minutes, stirring every 10 minutes, until broth has reduced.
To make chewier [which let me tell you, you might not want it any chewier. The above is chewy. ] Bake at 350F in sprayed
pan for 30 minutes.
Makes 2 large or 4 small servings.
NOTE: No Chicken Broth is a name for a light vegetable broth with chicken style seasonings in. From Imagine Soups. It

Any good light vegetable broth using those seasonings will work.
I like this because it is firm, chewy like a good caramel and doesn't crumble.
